This classic dutch baby pancake is made with plenty of apple and spices to give it a great depth of flavor. It's perfectly portioned for a two person brunch and takes about 30 an hour to make. Serve it with maple syrup hot from the oven for a fantastic weekend dish.
Start by peeling and slicing your apple into thin wedges toss them with the cinnamon in a small bowl and set aside
Then heat the butter in an 8inch cast iron pan over medium high heat
Once the butter is melted add your apple slices to the hot butter and cook for about 5 minutes turning the apples as needed to brown them gently on all sides. You want them to be softer but not completely falling apart.
Once the apples are ready add the brown sugar, mix to combine and then put the pan in the oven and preheat it to 425°F
Make the pancake batter by combining the ingredients in a blender and blending until smooth.
Once the oven is ready pour the batter over the apples and bake for 13 - 16 minutes until the pancake is puffed, golden brown and no longer liquid in the center.
Serve immediately with maple syrup or powdered sugar.
