Apple Pancake: A Brunch Recipe For Two

A fall brunch for two people (or an ode to the Apple Pancake)

I think Saturday morning brunches are potentially the definition of happiness. There’s just something so insanely perfect about having good food (ideally an apple pancake) and the whole weekend stretching out ahead of you.

Back in the pre-covid era, brunches involved getting together with a group of friends and cooking an assortment of things.  We’d play music, crack open a bottle of prosecco and sip on mimosas. Our main concerns were trying to fit everyone around our table and whether anyone had remembered to buy avocados.  

These days brunches in my house are significantly less hectic but just as delicious.  Instead of 12 different people trying to cook 8 different dishes, Loml and I tend to stick to one dish and I cook while he makes me the all important cappuccino.  This apple pancake has to be one of our favorites.

I love dropping butter into a super hot cast iron and watching it melt and sizzle. Once the butter is hot, you toss in a pile of sliced apples and some cinnamon. 

While the apples are caramelizing take a few minutes to mix together the pancake batter. Pour the batter into the pan, put the whole thing in the oven and wait for it to cook.  15 minutes later you have a beautifully puffed and golden pancake filled with apples and just set in the middle.  

Sure it’s not quite the hectic mornings we were used to, but listening to music and slicing apples is still a pretty perfect way to spend your Saturday, or really any day if you ask me.

What is a Dutch Baby Pancake ?

This pancake is a cross between a French crepe and an American popover. You start with a very hot pan with a few knobs of butter. Once the butter is really hot you pour in a thin pancake batter and put it in the oven. As the outer edges cook you’ll see the edges of the pancake puff up and brown while the middle stays a paler color. The pancake is ready once the middle is set and the edges are nicely browned.

The resulting pancake is soft and eggy, perfect with fruit or maple syrup. You can cook the batter by itself or, as we do here, add in sautéed apples or other fruit. This version is perfect for two people, but you can easily scale up the recipe, just make sure to grab a larger pan!

Apple Dutch Baby Pancake for Two

This classic dutch baby pancake is made with plenty of apple and spices to give it a great depth of flavor. It's perfectly portioned for a two person brunch and takes about 30 an hour to make. Serve it with maple syrup hot from the oven for a fantastic weekend dish.

Equipment

  • Cast Iron Pan

Ingredients
  

Apples

  • 1 Apple Granny Smith or other cooking apple
  • 30 g butter
  • 1/2 tsp ground cinnamon
  • 1 tsp brown sugar

Pancake batter

  • 80 g milk
  • 40 g flour
  • 1 1/2 tsp sugar
  • pinch salt
  • pinch nutmeg
  • 2 eggs

Instructions
 

  • Start by peeling and slicing your apple into thin wedges toss them with the cinnamon in a small bowl and set aside
  • Then heat the butter in an 8inch cast iron pan over medium high heat
  • Once the butter is melted add your apple slices to the hot butter and cook for about 5 minutes turning the apples as needed to brown them gently on all sides.  You want them to be softer but not completely falling apart.
  • Once the apples are ready add the brown sugar, mix to combine and then put the pan in the oven and preheat it to 425°F
  • Make the pancake batter by combining the ingredients in a blender and blending until smooth.
  • Once the oven is ready pour the batter over the apples and bake for 13 – 16 minutes until the pancake is puffed, golden brown and no longer liquid in the center.
  • Serve immediately with maple syrup or powdered sugar.
