Equipment
- Cast Iron Pan
Ingredients
Apples
- 1 Apple Granny Smith or other cooking apple
- 30 g butter
- 1/2 tsp ground cinnamon
- 1 tsp brown sugar
Pancake batter
- 80 g milk
- 40 g flour
- 1 1/2 tsp sugar
- pinch salt
- pinch nutmeg
- 2 eggs
Instructions
- Start by peeling and slicing your apple into thin wedges toss them with the cinnamon in a small bowl and set aside
- Then heat the butter in an 8inch cast iron pan over medium high heat
- Once the butter is melted add your apple slices to the hot butter and cook for about 5 minutes turning the apples as needed to brown them gently on all sides. You want them to be softer but not completely falling apart.
- Once the apples are ready add the brown sugar, mix to combine and then put the pan in the oven and preheat it to 425°F
- Make the pancake batter by combining the ingredients in a blender and blending until smooth.
- Once the oven is ready pour the batter over the apples and bake for 13 - 16 minutes until the pancake is puffed, golden brown and no longer liquid in the center.
- Serve immediately with maple syrup or powdered sugar.
